In the video below we hear from Fedele Bauccio, founder and CEO of Bon Appetit Management. His company has built its reputation on locally sourced, seasonal, healthy foods, and is actively involved in sustainability issues affecting every aspect of the food industry.

Bauccio shares some personal preferences, what he enjoys most about his job, and what he would request if he had just one final meal.

Isaac Pino: Two more questions, just to wrap it up on my end. What is your favorite part of your job, and what's next on the horizon?

Fedele Bauccio: The favorite part of my job is twofold. One is raising hell with the industry. I'm kind of a maverick, and that's OK. And spending time with all of our people, especially in the kitchens.

Isaac: And finally, I wanted to get your insight since you do have a background, I believe, in cooking; maybe not a professional chef, but experience. What would be your Death Row meal?

Bauccio: He's good. Can I hire him?

I think my favorite meal would be a roast chicken.

Isaac: Some sides with that?

Bauccio: Roast chicken with some potatoes in the pan as they're roasting, with lemon and olive oil. Maybe some rosemary on it. Some really great sourdough bread from San Francisco, and probably some beautiful sliced tomatoes, just simple with a little bit of oregano and sea salt on it, and a drip of olive oil. I'd be very happy.

Isaac: That sounds pretty appetizing. And a glass of Italian wine, I'm sure.

Bauccio: Oh, yeah. We have to have the red wine.
